Turn Up the Heat: Understanding Our Spice Levels

One of the most common questions our servers get asked by first-time guests is, “How spicy is the Hot?”

Because spice tolerance is entirely subjective—what causes one person to break a sweat might barely register for someone else—we designed our menu to put you in complete control of the heat. Unlike restaurants that pre-mix massive batches of spicy sauce, we build your boil bag to order, allowing us to calibrate the chili levels precisely to your liking.

Here is a breakdown of what to expect as you climb the heat ladder.

The Baseline: Mild

If you are entirely spice-averse, this is where you want to stay. Ordering your bag “Mild” means that we will not add any extra chili powder or cayenne pepper to the sauce. You will get the pure flavor of the Garlic Butter or Lemon Pepper without any lingering burn.

Note: If you order the Cajun or House Blend sauce on Mild, it will still have a very subtle, earthy tingle simply due to the nature of traditional Cajun spices like paprika and black pepper, but it will not be “spicy.”

The Sweet Spot: Medium

This is our most highly recommended starting point for new guests who enjoy a little bit of flavor without overwhelming their palate.

At the Medium level, the heat is definitely present, but it acts as a background note. It is designed to warm the back of your throat and enhance the savory flavors of the butter without making you reach for your water glass after every bite. It is the perfect balance of flavor and kick.

Turning It Up: Hot

Now we are getting serious. When you order your bag “Hot,” you should expect to feel a sustained burn that builds the more you eat.

This level is intended for people who actively enjoy spicy food. The cayenne pepper becomes a primary flavor profile in the bag. Your lips might tingle, and you will definitely want an ice-cold draft beer or a sweet cocktail nearby to help cut through the heat.

The Ultimate Challenge: Fire / Extra Hot

This level comes with a warning label. We do not hold back on the Fire setting.

The Extra Hot level is designed specifically for “chili-heads” who want their meal to be a physical challenge. We load the sauce with an intense amount of spice that will absolutely cause you to sweat. The heat is aggressive, sharp, and lingering. If you order this, you are committing to the burn.

A Pro Tip from the Kitchen

If you are torn between two levels—say, you think Medium might be too weak but Hot might be too strong—always order the lower level! You can simply ask your server for a small side cup of our hot seasoning. This allows you to manually adjust the spice level of your meal as you eat by dipping your seafood into the extra heat.
